Skillet Huevos Rancheros

The garden is flourishing so now what do I make? I have been on the hunt for different recipes to make with all the goodies growing in the garden. This was 100% a quick & only a semi-homemade meal that tasted great!

Ingredient List

  • I had left-over pulled pork from dinner the night before

  • 1 diced onion

  • 1 tbsp OO

  • 1 bunch of cilantro

  • 6 eggs

  • 1/2 cup salsa (made mine from the garden)

  • 7 chopped garlic cloves

  • 1 diced bell pepper

  • 2 diced banana peppers

  • 1 tsp smoked paprika

  • salt & pepper to taste

  • handful of crunchy onions

Directions

  1. Over medium heat warm your olive oil and simmer the onions & peppers until soft then add in the chopped garlic.

  2. Top the veggies with the left-over pulled pork.

  3. Pour the salsa over the veggies & pork

  4. crack your eggs around the skillet allowing a little space between the eggs. If your skillet is large in size you may need to add more salsa or a little water so you have enough liquid in the pan to simmer the eggs.

  5. I put the lid on my pan and let the eggs simmer for about 5 minutes or until the whites were completely solid.

  6. Once the eggs are cooked over medium (or however you like them) top with the smoked paprika, salt, & pepper. Garnish with chopped cilantro & crunchy onions.

    SOMETHING EXTRA: a drizzle of sour cream on top could be good too!
